AccozymesTM Thermostable Alpha Amylase is obtained from submerged fermentation of Bacillus Licheniformis by series of scientific methods. It can be widely used in manufacture starch sugar (glucose, fructose, malts syrup, maltodextrin), gourmet powder, organic acid (citric acid, lactic acid, itaconic acid, malic acid) and gluconate, etc. Thermostable Alpha Amylase is an incision enzyme, which hydrolyzes the α -1,4-glucoside bond of starch, soluble dextrins and oligosaccharide. It can reduce the viscosity of starch slurry and producedextrin and a few of glucose and maltose.

Working Temperature: 55℃-105℃(Effective), 90℃-105℃ (Optimum).
Working pH: 5.0-8.0 (Effective), 5.5-7.0 (Optimum).
Ca2+ has increasing effect on enzyme activity; Zn2+, Pb2+ and Hg2+ have inhibiting effect on enzyme activity.
